mails sent through a com_contact form always come from the site-configured $mailfrom.
This is, in most cases, (users trying to contact a member of a organization through a web form) undesirable.
Site admin should be able to specify that mails through com_contact-forms should be sent using the user-supplied from: mail address.

It's very easy to create a pull request, just follow the instructions on github or read the docs on the joomla wiki.
Since this is a feature request (the vast majority people do not want to reveal real emails in contact form responses since they will just get spammed constantly so you would be adding a feature to make that configurable).
