Steps to reproduce the issue
1 - from website backend create these 2 custom fields : https://i.imgur.com/VCfSrYm.png
2 - configuration for text field : https://i.imgur.com/qN5aAPc.png
3 - configuration for subform field : https://i.imgur.com/JPczB0F.png
4 - from website backend publish an item menu for article submission form
5 - go on website frontend then open article submission form
6 - go on custom fields tab
7 - add a new repeatable field : https://i.imgur.com/qXuPm2l.png
8 - modify default value of field added previously : https://i.imgur.com/BRZMYFW.png
9 - then add another value of the same field : https://i.imgur.com/v8Turmp.png
Actual result
Value added previously on first field has been removed : https://i.imgur.com/Sq5R2Wi.png
Expected result
Value added previously on first field must be kept : https://i.imgur.com/opPDoPE.png

Depends.
Even if there is a default value inside every field, a user can decide to update it for some reasons.
We had many feedbacks about customers.
Maybe there is a misunderstanding - I thought you were talking about changing the default value in the field as set in the admin

For the benefit of others who may see this what was the extension
extension is Easy Layouts.
I already sent a video to the dev.
This is the expected behaviour
You would not want a situation where someone completes a field that says they do not agree and then the site changes the value of that field from no to yes
