Make an article without a menu item
(I have used article 'Million' and removed it from all menu items).
The article is displayed using:
/component/content/article/millions?catid=10
In All Menu Item,Home:
Options:
Create Date: Use Article Settings
Content, Article, Millions
Options:
Create Date: Use Global (Hide)
Result: Create Date VISIBLE
Create Date: Hide
Result: Create Date NOT VISIBLE --> Okay
Create Date: Use Global (Hide) gives
Result: Create Date NOT VISIBLE
This is OKAY
Create Date: Use Global (Hide) gives:
Result: Create Date VISIBLE
This is WRONG with Use Global (Hide)

This behavior is the same for all other options which are available in All Menu Item,Home, when an option is set to: Use Article Settings
The Use Global () value is NOT used.

No, that is not the case, because I removed article 'Million' from all menus, so that it is not linked to a menu.
An article not linked to any menu get the settings from menu 'Home'.
Then:
Global(Show) and Show
or
Global(Hide) and Hide
are not the same for that Home -menu, options, e.g. create date, 'Use Article Settings'.
That looks strange and inconstistent to me.

The link /component/content/article/millions?catid=10 calls a category. If this is about sample data, the category contains several articles, not only "millions".
I made a new article, call it directly with index.php?option=com_content&view=article&id=13 and it is all correct.

it is perharps because of the settings of "articles" menu item ?
it leads to category of the article "millions" and overrides the settings.
