[#45551] - [5.3.1] Custom Field category selection doesn't hide the chosen categories

Steps to reproduce the issue
- Create two categories: "catA" and "catB"
- Create a custom field (articles)
- At the right column in the "General" tab, choose "catA"
Expected result
It should hide the "catA" from the list, because I already selected it.
Actual result
It keeps all the categories, doesn't hide the chosen ones.
System information (as much as possible)
Joomla 5.3.1 (updated from 5.3.0), PHP 8.3, Apache 2, MySQL 8
Additional comments
In Joomla 5.3.0 it works as expected, I tested it.

I just see the same thing has been reported 5 days ago, see issue #45536 .

I think this is desired, see PR #45365 .
I see, and I understand, but this fix doesn't indicate at the list that the item has been selected, and allows me to "select"/hover it (although it won't add it again, of course).
I suggest adding a CSS style to grey it out (I just read the issue #45536 and it has that same suggestion, but with a "✓")
