You need to choose a category (under Options). It is a required field.
In the Options tab for this particular Menu item there are only two items:
What if I don't need a default category...? If it's not an option then why there is NO settings possible?

@franz-wohlkoenig thanks! I got it working, though I would suggest to change the error message to be more explanatory and let users know about these steps and this new change. Somethin like:
"Please choose a default category, then you can set NO for "Uncategorised"
The previous UI scenario was fine to me, more straightforward at least - don't see reason why it has changed.

this depends on Rights given by Bug Squad Team in Joomla Issue Tracker. Reports like yours get Categorized, prioritezed ... to help Maintainers.
Setting no does not mean uncategorized!

Then it's totaly unclear why we have to choose some default category as a requred option to be able then set it to NO later... obscure UX/UI imho
Everything worked nicely in beta3, I am just curious why it's changed in beta4... or I'am missing here something?

Yes it was a mistake by me in #14639
I will do a PR to fix this and revert that behaviour soon
